Jeyuk Bokkeum Mistakes — Steamed Pork, Scorched Paste, Mushy Pear

The three ways spicy pork stir-fry goes wrong at home: a crowded wet pan, a marinade that sat overnight, and gochujang burnt onto a too-hot empty spot.

TL;DR
Pat the pork. Sear in batches. Marinate under 40 minutes if pear is in the mix. Do not dump all the sauce onto raw meat in a small skillet. Method: /blog/how-to-make-jeyuk-bokkeum/.
Jeyuk should taste browned and glazed. If it tastes boiled, bitter, or baby-food soft, match the symptom. Do not add more gochujang on top of a flooded pan and hope.
Steamed, gray pork. The pan was crowded or cold, or the meat went in wet. Water comes out, the temperature drops, you are now braising. Batch. Pat. Smoke. Pull. Then glaze.
Mushy meat. Pear (or kiwi, or pineapple) sat too long. Those marinades are short. If you need to start in the morning, mix the gochujang-soy without the fruit and add the fruit closer to dinner — or skip the fruit.
Bitter, black fond. Sugar and paste scorched on a dry hot patch. Deglaze with a splash of water and accept the pot, or start the glaze in a cleaner pan. Next time, sauce goes in with the meat after the first sear, not onto bare steel.
Too sweet. Paste plus sugar plus pear plus mirin. Cut sugar next time. This time, add soy and unsauced seared pork if you have it, or serve with more lettuce and less rice so each bite is not candy.
Too salty. You used soup soy and table soy and paste. Taste the marinade before it hits the whole kilo. Dilute with unsalted onion and a little water in the glaze step.
Not spicy, just thick. That is gochujang without gochugaru. Add flakes off a hard boil so they stay red. More paste is not more heat.
Oil slick. Fatty shoulder plus a puddle of oil plus sesame at the start. Use a film to sear. Sesame at the end.
Leftover microwave rubber. Reheat in a pan. Splash of water. The microwave makes the sugar sticky and the slices tough. Same leftover physics as leftover tteokbokki, different sauce.
Wrong dish energy. If you wanted grill smoke, you wanted bulgogi.ai. If you wanted boiled slices and cabbage wraps, you wanted bossam on this site’s comparison page. If you wanted fried rice, leftover jeyuk is an ingredient, not a failure of this recipe.
