How to Make Jeyuk Bokkeum — Spicy Korean Pork Stir-Fry That Caramelizes

Thin pork shoulder, a short pear-gochujang marinade, and a smoking pan. The weeknight stir-fry that should glaze, not stew.

Jeyuk bokkeum is spicy-sweet pork stir-fry. Shoulder sliced thin, coated in gochujang, soy, garlic, and grated pear, cooked hot so the edges brown and the marinade becomes a glaze. It is the weeknight pork of a lot of Korean homes. It is not bossam, not samgyeopsal on a grill, and not a stew you walk away from. This page is the method. Cut first. Half-frozen shoulder is easier to slice 3 mm against the grain. Uneven slabs mean some pieces stew while others dry. Belly works if you want more fat; loin dries. Ground pork is a different dinner. 800 g feeds four with rice and lettuce, or two with leftovers that actually reheat.
Marinade, for that 800 g: 3 tablespoons gochujang, 1 tablespoon gochugaru, 2 tablespoons soy, 1 tablespoon sugar, 1 tablespoon mirin or rice wine, 1 tablespoon sesame oil, 4 garlic cloves, a little ginger, one grated Asian pear (or Bosc). Mix. Coat. 20–40 minutes. Pear enzymes plus time turn the meat mushy if you leave it overnight. That clock is not optional.
Pan. Wide, smoking, lightly oiled. Single layer. 60 seconds, flip, 30 seconds, out. If the pan floods, you crowded it or the pork was wet — pat it, do a second batch. Then onion (and a little more garlic) in the leftover fond. Return the pork with the remaining marinade and toss 1–2 minutes until glossy, not swimming.

Heat. Gochugaru is the chile; gochujang is salt, sweet, and fermented depth. More paste makes a sweeter, thicker glaze before it makes a hotter one. More flakes make it hotter. Weeknight shortcuts that still work. Pre-sliced “jeyuk” from a Korean grocer — still pat dry, still do not over-marinade if it is already sauced. No pear: a spoon of grated apple or a splash of kiwi in a pinch, or skip the enzyme and accept a slightly chewier slice. No gochujang: this is no longer jeyuk; cook a soy-garlic stir-fry and do not use this title.
